Whole rye bread — which is made entirely from rye wheat and sourdough is the darkest bread, and it’s particularly popular in Northern Europe.
Rye bread contains 3-5 times more mineral elements and B vitamins than wheat bread. Keep in mind, though, that the maximum concentration of nutrients is maintained for 36 hours after baking, later valuable properties will begin to decrease— which is plenty of reason to enjoy the bread straight away!
