Monkuchen or poppy seed cake – is a traditional dish of German and Austrian cuisines. Monkuchen in Germany and Austria is an open sweet pie on shortbread dough with a large layer of poppy seed filling and a streusel on top.
To prepare the poppy filling, poppy seeds are first ground, there are even special poppy mills. The characteristic poppy aroma is revealed only when the seed shell breaks. Ground poppy seeds are boiled with milk and sugar, and then starch, semolina, breadcrumbs or eggs are added to thicken the filling.
